Ingredients list for Damper Bread
- Refined Flour 3 cups + for dusting
- a pinch Butter
- 1 1/2 teaspoons Baking powder
- 3 tablespoons Butter chilled and cubed
Method
- Preheat oven to 180°C. Line a baking tray with butter paper.
- Mix together flour, salt and baking powder in a bowl. Add butter cubes and rub with your fingertips till it resembles fine breadcrumbs. Add three-fourth cup water and knead into semi-soft dough.
- Turn the dough onto a lightly floured surface and knead gently for one to two minutes.
- Flatten the dough into a disc of eighteen centimeter diameter and place it on the tray. Dip a knife in flour and make incisions on top. This is the damper bread.
- Dust the damper with a little extra flour and bake in the preheated oven for thirty minutes. Cool slightly.
- Slice and serve warm or at room temperature.
