Ingredients list for Damper Bread

  • Refined Flour 3 cups + for dusting
  • a pinch Butter
  • 1 1/2 teaspoons Baking powder
  • 3 tablespoons Butter chilled and cubed

Method

  1. Preheat oven to 180°C. Line a baking tray with butter paper.
  2. Mix together flour, salt and baking powder in a bowl. Add butter cubes and rub with your fingertips till it resembles fine breadcrumbs. Add three-fourth cup water and knead into semi-soft dough.
  3. Turn the dough onto a lightly floured surface and knead gently for one to two minutes.
  4. Flatten the dough into a disc of eighteen centimeter diameter and place it on the tray. Dip a knife in flour and make incisions on top. This is the damper bread.
  5. Dust the damper with a little extra flour and bake in the preheated oven for thirty minutes. Cool slightly.
  6. Slice and serve warm or at room temperature.
