Ingredients list for Curried Chicken Pita Sandwich

  • 400 grams Boneless chicken cut into thick strips
  • 1 tablespoon Curry powder
  • 2 Pita breads
  • 2 tablespoon Oil
  • 1 medium Medium onion chopped
  • 10-12 Garlic cloves chopped
  • 1/2 cup Chicken stock
  • 3 teaspoons Chilli sauce
  • 2 Fresh thyme sprigs
  • to taste Salt
  • 5-6 Spring onion bulbs
  • 4 tablespoons Yogurt

Method

  1. Heat a non-stick pan and heat pita breads in it.
  2. Heat oil in a pan, add onion and garlic and saute for 1 minute. Add chicken and curry powder and mix. Add chicken stock, mix and cook and 2 minutes.
  3. Add chilli sauce and thyme and mix. Add salt and mix. Reduce heat and cook till chicken is done.
  4. Halve pita breads and open out the pockets. Roughly slice spring onion bulbs.
  5. Stuff chicken equally into pita pockets. Drizzle 1 tbsp yogurt, a few drops of chilli sauce and sprinkle a few spring onion slices over the chicken in each pocket and serve immediately.
