Ingredients
- 400 grams boneless chicken, cut into thick strips
- 1 tablespoon curry powder
- 2 pita breads
- 2 tablespoons oil
- 1 medium onion chopped
- 10-12 garlic cloves chopped
- ½ cup chicken stock
- 3 teaspoons chilli sauce
- 2 fresh thyme sprigs
- Salt to taste
- 5-6 spring onion bulbs
- 4 tablespoons yogurt
Method
- Heat a non-stick pan and heat the pita breads in it.
- Heat oil in a pan, add onion and garlic and saute for 1 minute. Add chicken and curry powder and mix. Add chicken stock, mix and cook and 2 minutes.
- Add chilli sauce and thyme and mix. Add salt and mix. Reduce the heat and cook till the chicken is done.
- Halve the pita breads and open out the pockets. Roughly slice spring onion bulbs.
- Stuff chicken equally into pita pockets. Drizzle 1 tbsp yogurt, a few drops of chilli sauce and sprinkle a few spring onion slices over the chicken in each pocket and serve immediately.
