Ingredients
- 4 onions large, thickly sliced, layers separated and soaked
- 3 cups refined flour
- 1 teaspoon red chilli powder
- 1 teaspoon mixed dried herbs
- Salt to taste
- 1 teaspoon onion powder
- Crushed black peppercorns to taste
- 3 tablespoons fresh parsley chopped
- ¾ cup drinking soda
- 1½ cups nachos
- ½ cup dried bread crumbs
- Oil for deep-frying
- Fresh curly parsley sprigs for garnish
- Mayonnaise to serve
Method
- Take 1½ cups refined flour in a large bowl, add red chilli powder, dried mixed herbs, salt, onion powder, crushed black peppercorns, chopped parsley and whisk till well combined. Add drinking soda and whisk till you get a smooth batter of coating consistency.
- Crush nachos to a fine powder and put into a bowl. Add dried breadcrumbs and mix well. Take the remaining refined flour in another bowl. Place the onion rings on a kitchen towel and gently pat them dry.
- Heat sufficient oil in a kadai.
- Coat each onion ring with flour, dip in the batter and roll in nachos-breadcrumbs mixture. Slide them into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Transfer to a serving platter, garnish with curly parsley sprigs and serve hot with mayonnaise.
