Cream of Spinach Soup

Ingredients 
- 1 large bunch spinach, cleaned 
 - 1 tablespoon butter
 - 1 tablespoon finely chopped garlic
 - 1 tablespoon refined flour (maida)
 - 1½ cups milk
 - Salt to taste
 - White pepper powder to taste 
 - 1 tablespoon fresh cream + for drizzling 
 
Method
- Blanch spinach leaves in boiling water for 1 minute. Refresh in ice cold water and blend to a smooth puree with little water. 
 - Heat butter in a non-stick pan. Add garlic and flour, mix and sauté for a minute. 
 - Add spinach puree and mix well. Add some water and stir. Add milk and mix well. 
 - Add salt and pepper powder, stir to mix and bring to a boil. Add cream and mix. 
 - Drizzle some cream and serve hot.
