Ingredients list for Cream of Broccoli Soup-SK Khazana

  • 12-16 Broccoli florets blanched
  • 1/2 cup Spring onion greens blanched
  • 1 1/2 teas to sprinkle Nutmeg powder
  • 1 tablespoon Butter
  • 1 tablespoon Refined flour (maida)
  • 1 1/2 cups Milk
  • to cook Salt
  • for drizzling Fresh cream

Method

  1. Blend together spring onion greens, broccoli florets and 1 teaspoon nutmeg power to a fine puree.
  2. Heat butter in a non-stick pan. Add flour, mix and sauté well. Add ½ cup milk and mix till the sauce thickens.
  3. Add prepared puree and mix well. Add remaining milk, salt and ½ teaspoon nutmeg powder, mix well and bring to a boil.
  4. Drizzle some cream and sprinkle some nutmeg powder and serve hot.
