Ingredients
- ¾ cup couscous
- Salt to taste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon split skinless black gram
- 1 teaspoon split Bengal gram
- 1 inch ginger piece, finely chopped
- 2 green chillies, finely chopped
- 10 curry leaves
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- ½ teaspoon turmeric powder
- ½ cup green peas, blanched
Method
- Place the couscous in a mixing bowl, add salt, and mix well. Add 1½ cups hot water, cover the bowl with cling wrap, and set aside.
- Heat oil in a non-stick pan, add cumin seeds, split black gram and split Bengal gram, sauté till the grams are golden brown.
- Add ginger, green chillies, and curry leaves and sauté. Add onion and sauté until fragrant. Add tomato and salt, mix, and cook until tomatoes become soft.
- Add turmeric powder and sauté for ½ minute.
- Remove the cling wrap and separate the couscous grains with a fork. Add this with green peas to the pan and mix well.
- Transfer into a serving bowl, garnish with coriander leaves and serve hot.
