Ingredients for Coriander Lemon Prawns Recipe

  • Prawns shelled and deveined 250 grams

  • Coriander Leaves 1 cup

  • Garlic 6-7 cloves

  • Ginger 1 inch piece

  • Lemons 2

  • Crushed black peppercorns 1/2 teaspoon

  • Extra virgin olive oil 3 tablespoons

  • Green olives seeded stuffed with pimentos a few

Method

Step 1

Put coriander leaves, garlic and ginger in a mixer jar. Grate the rind of one lemon directly into the jar. Squeeze the juice of 2 lemons into the jar and add salt. Grind everything together to a fine paste.

Step 2

Transfer the paste into a bowl, add prawns and mix. Add crushed black peppercorns and mix. (If you like it spicier you can grind green chillies with the coriander leaves.)

Step 3

Set the prawns aside to marinate for 15-20 minutes. Heat extra virgin olive oil in a non stick pan. Place a green olive in the curve of each prawn and secure the two ends of the prawn with a toothpick.

Step 4

Put the prawns in the pan and cook till they are completely cooked. Take care not to over cook them. Serve hot.
