Ingredients

  • 1 boneless chicken breast, cut into small cubes
  • Juice of 1 lemon
  • ¼ cup coconut milk
  • 1 tablespoon oil
  • 4-5 garlic cloves, chopped
  • 1 medium onion, chopped
  • 2 lemon grass stalks
  • ½ cup American corn kernels
  • 4 cups chicken stock
  • Salt to taste
  • ½ teaspoon crushed black peppercorns
  • 2-3 kaffir lime leaves, shredded
  • 1-2 spring onions, chopped

Method

  1. Heat oil in a non-stick pan, add garlic and onion and sauté for a while. Slice lemon grass stalks and add and sauté well.
  2. Add chicken and sauté for two minutes. Add corn kernels and sauté for one minute. Add chicken stock, mix and bring to a boil.
  3. Add coconut milk, lemon juice, salt and crushed peppercorns, mix well and simmer for a minute. Add kaffir lime leaves and stir.
  4. Pour soup into serving dish and garnish with spring onions and serve hot.
