Ingredients list for Chorizo and Sweet Potato Roll Ups
- 3-5 Chorizo deskinned
- 1 medium Sweet potatoes peeled and cut into a ½ inch cubes
- 4 Tortillas
- 2 tablespoons Oil
- 2 Garlic cloves minced
- 1 small Onion finely chopped
- 2 Jalapenos fresh, seeded and chopped
- 1 cup Arrabiata sauce
- 1 cup Processed cheese grated
Method
- Preheat oven to 180°C. Grease a casserole with some oil.
- Heat oil in a non-stick pan, add garlic and sauté for a minute.
- Add onion, mix and sauté till translucent. Add jalapenos, mix and sauté for a minute
- Add sweet potato, mix well and cook on medium heat till soft. Add chorizo, mix and cook till they turn brown. Remove from heat and set aside.
- Spread this mixture on each tortilla. Fold in the ends and roll up around the filling.
- Place theseroll-ups in the greased casserole. Pour the Arrabiata sauce over them and top with cheese. Place the casserole in the preheated oven and bake till the cheese melts.
- Serve hot.
