Ingredients list for Chocolate Mousse Shots
- 120 grams Dark chocolate chopped
- 60 millilitres Fresh cream
- 2 Egg yolks
- 1 Egg
- 600 grams Castor sugar (caster sugar)
- 1 tablespoon Orange juice
- 1 cup Whipped cream
- for garnishing Chocolate shavings
Method
- Heat cream in a non-stick pan and once it comes to a slight boil, turn off heat. Add chocolate and mix well.
- Place the egg yolks and the egg in the upper bowl of a double boiler. Add sugar and whisk well to make a sabayon.
- Take the bowl off the double boiler. Add the chocolate ganache and mix. Add orange juice and mix well. Add whipped cream and fold in well.
- Fill the mixture into a piping bag and pipe into individual shot glasses. Refrigerate for 3-4 hours or till set.
- Garnish with chocolate shavings and serve.
