Ingredients list for Chocolate Cream
- 180 grams Dark chocolate chopped
- 300 grams Dark chocolate chopped
- 3 tablespoons Cream
- 100 grams Butter
- 1 1/4 cups Refined flour (maida)
- 1 teaspoon Baking powder
- 2 tablespoons Cocoa powder
- a pinch Salt
- 1/2 cup Sugar
- 2 Eggs
Method
- Preheat oven to 160°C.
- Melt butter and 180 gms dark chocolate in a double boiler and whisk well.
- Sift together refined flour, baking powder, cocoa powder and salt into a bowl.
- Melt 125 gms dark chocolate separately in a double boiler.
- Add sugar to butter-chocolate mixture and mix well. Add ½ the sifted ingredients and mix well.
- Break 1 egg and add and mix well. Add remaining sifted ingredients and mix well. Break remaining egg and add and mix well.
- Add cream to 125 gms melted chocolate and mix well. Remove from heat and cool to room temperature
- Place a silicon sheet on a baking tray. Pour chocolate-butter mixture in a piping bag and pipe out small cookie shaped portions on the sheet.
- Place the tray in preheated oven and bake for 7-8 minutes. Remove from oven and cool to room temperature.
- Take one cookie and pipe a portion of chocolate-cream mixture over it. Cover with another cookie to make a sandwich.
- Chill in the refrigerator and serve.
