Ingredients list for Choco Almond Cookies
- 75 grams Almonds blanched
- + for dusting Icing sugar 1¾ cups
- 1 tablespoon Cocoa powder
- 50 grams Dark chocolate
- 1 Egg white
- ½ teaspoon Vanilla essence
Method
- Preheat the oven to 100ºC.
- Toast the almonds in the preheated oven for five minutes. Remove from oven and cool.
- Grind together the toasted almonds and two tablespoons icing sugar into a coarse powder.
- Sieve together the remaining icing sugar and cocoa powder into a bowl. Add the ground almonds and mix.
- Melt the chocolate in a microwave. Remove from heat and stir till smooth.
- Whisk together the egg white in another bowl till it forms stiff peaks. Add the vanilla essence and beat.
- Add the beaten egg whites in the almond mixture and fold well. Add the melted chocolate and mix. Cover with a cling film and chill overnight.
- Preheat the oven to 160º C. Line a baking tray with parchment paper.
- Take the dough out of the fridge and leave it at room temperature till it softens.
- Dust the worktop with some icing sugar, place the dough on it and roll into a sausage. Cut it into sixteen pieces and shape them into balls.
- Spread some icing sugar on a plate. Coat the balls with the icing sugar and put them on the lined baking tray. Flatten them a little.
- Put the tray in the preheated oven and bake for eighteen to twenty minutes. Remove from oven and cool.
- Serve or store in an airtight container.
