Ingredients list for Chinese Prawn And Mushroom Omlette
- 1 cup Small Prawns peeled and deveined
- 8 Button Mushrooms sliced
- 8 Eggs beaten
- to taste Salt
- 1 Leek
- 4 tablespoons Olive oil
- 8 teaspoons Cornflour/ corn starch
- 8 tablespoons Bean sprouts
- 1 teaspoon Chilli sauce
- 2 teaspoons Dark soy sauce
Method
- For each omelette trim and finely slice 1 inch piece of leek. Finely slice 2 mushrooms.
- Break 2 eggs into a bowl, add salt and whisk well. Heat 1 tbsp olive oil in a non stick pan.
- Add leeks and let them sweat for a few seconds. Add mushrooms and let them sweat for a few seconds.
- Add 2 tsps cornflour to ¼ cup prawns and mix well. Add them to the mushrooms and cook on high heat.
- Add 2 tbsps bean sprouts, ¼ tsp red chilli sauce, ½ tsp soy sauce and mix well.
- Add the whisked eggs and reduce heat. Mix lightly and then let the eggs set.
- When the underside is done and the edges begin to leave the sides of the pan, roll up the omelette, flip and let it cook evenly on all sides.
- Similarly make 3 more omelettes with the remaining ingredients.
- Serve hot with bread toasts.
