Ingredients list for Chinese Prawn And Mushroom Omlette

  • 1 cup Small Prawns peeled and deveined
  • 8 Button Mushrooms sliced
  • 8 Eggs beaten
  • to taste Salt
  • 1 Leek
  • 4 tablespoons Olive oil
  • 8 teaspoons Cornflour/ corn starch
  • 8 tablespoons Bean sprouts
  • 1 teaspoon Chilli sauce
  • 2 teaspoons Dark soy sauce


  1. For each omelette trim and finely slice 1 inch piece of leek. Finely slice 2 mushrooms.
  2. Break 2 eggs into a bowl, add salt and whisk well. Heat 1 tbsp olive oil in a non stick pan.
  3. Add leeks and let them sweat for a few seconds. Add mushrooms and let them sweat for a few seconds.
  4. Add 2 tsps cornflour to ¼ cup prawns and mix well. Add them to the mushrooms and cook on high heat.
  5. Add 2 tbsps bean sprouts, ¼ tsp red chilli sauce, ½ tsp soy sauce and mix well.
  6. Add the whisked eggs and reduce heat. Mix lightly and then let the eggs set.
  7. When the underside is done and the edges begin to leave the sides of the pan, roll up the omelette, flip and let it cook evenly on all sides.
  8. Similarly make 3 more omelettes with the remaining ingredients.
  9. Serve hot with bread toasts.
