Chinese Prawn And Mushroom Omlette Prawn and mushrooms in spicy chilli sauce with whisked egg poured over it and cooked This recipe is from FoodFood TV channel By Sanjeev Kapoor 28 Nov 2014 in Recipes Course New Update Main Ingredients Small Prawns, Button Mushrooms Cuisine Chinese Course Snacks and Starters Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Chinese Prawn And Mushroom Omlette 1 cup Small Prawns peeled and deveined 8 Button Mushrooms sliced 8 Eggs beaten to taste Salt 1 Leek 4 tablespoons Olive oil 8 teaspoons Cornflour/ corn starch 8 tablespoons Bean sprouts 1 teaspoon Chilli sauce 2 teaspoons Dark soy sauce Method For each omelette trim and finely slice 1 inch piece of leek. Finely slice 2 mushrooms. Break 2 eggs into a bowl, add salt and whisk well. Heat 1 tbsp olive oil in a non stick pan. Add leeks and let them sweat for a few seconds. Add mushrooms and let them sweat for a few seconds. Add 2 tsps cornflour to ¼ cup prawns and mix well. Add them to the mushrooms and cook on high heat. Add 2 tbsps bean sprouts, ¼ tsp red chilli sauce, ½ tsp soy sauce and mix well. Add the whisked eggs and reduce heat. Mix lightly and then let the eggs set. When the underside is done and the edges begin to leave the sides of the pan, roll up the omelette, flip and let it cook evenly on all sides. Similarly make 3 more omelettes with the remaining ingredients. Serve hot with bread toasts.
