Ingredients
- 3 tablespoons red chilli sauce
- 1 teaspoon red chilli powder
- 2 tbsps schezwan sauce + to garnish
- 1 cup brown Bengal gram (kala chana) , soaked overnight and boiled
- 2 medium potatoes (aloo) , boiled and peeled
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 tablespoon finely chopped garlic
- 1 tablespoon finely chopped ginger
- 1 medium onion , finely chopped
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 2 tbsps roughly chopped spring onion greens + to garnish
- Fried noodles to garnish
Method
- Heat oil in a non-stick pan, add cumin seeds, garlic and ginger, mix well and sauté for 2 minutes. Add onions, mix and sauté till translucent.
- Cut potatoes into small cubes, add and cook for 1-2 minutes.
- Add red chilli sauce, soy sauce, vinegar, red chilli powder, Schezwan sauce and brown Bengal gram, mix well and cook for 1-2 minutes.
- Add spring onion greens and toss.
- Transfer into a serving bowl, garnish with spring onion greens, Schezwan sauce and fried noodles and serve hot.
