By Sanjeev Kapoor 18 Aug 2016 in Recipes Veg New Update Chilled Almond Soup Main Ingredients Almonds , Fresh white bread Cuisine Fusion Course Soups Prep Time 5-10 minutes Cook time 0-5 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 1 cup almonds, blanched and peeled 4 slices fresh white bread 2 cloves garlic sliced 5 tablespoons olive oil 1 1/2 teaspoons vinegar Salt to taste 1/2 teaspoon black pepper powder to garnish almond flakes, toasted to garnish black grapes seedless, halved and skinned Method Tear the bread slices into a bowl and pour half cup cold water over them. Put the almonds and garlic in a blender and blend to a paste. Add the soaked bread and olive oil and continue to blend till smooth. Add the vinegar and one cup cold water and blend some more. Transfer the mixture into a bowl and season with salt and pepper powder. Adjust the consistency with more water. This is a thick soup. Refrigerate the soup. Serve the soup chilled garnished with toasted almond flakes and black grapes.
