Ingredients
- 1 cup almonds, blanched and peeled
- 4 slices fresh white bread
- 2 cloves garlic sliced
- 5 tablespoons olive oil
- 1 1/2 teaspoons vinegar
- Salt to taste
- 1/2 teaspoon black pepper powder
- to garnish almond flakes, toasted
- to garnish black grapes seedless, halved and skinned
Method
- Tear the bread slices into a bowl and pour half cup cold water over them. Put the almonds and garlic in a blender and blend to a paste.
- Add the soaked bread and olive oil and continue to blend till smooth. Add the vinegar and one cup cold water and blend some more.
- Transfer the mixture into a bowl and season with salt and pepper powder. Adjust the consistency with more water. This is a thick soup.
- Refrigerate the soup. Serve the soup chilled garnished with toasted almond flakes and black grapes.
