Ingredients for Chilled Almond Soup Recipe

  • Almonds blanched and peeled 1 cup

  • Fresh white bread 4 slices

  • Garlic sliced 2 cloves

  • Olive oil 5 tablespoons

  • Vinegar 1 1/2 teaspoons

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

  • Almond flakes toasted to garnish

  • Black grapes seedless halved and skinned to garnish


Step 1

Tear the bread slices into a bowl and pour half cup cold water over them. Put the almonds and garlic in a blender and blend to a paste.

Step 2

Add the soaked bread and olive oil and continue to blend till smooth. Add the vinegar and one cup cold water and blend some more.

Step 3

Transfer the mixture into a bowl and season with salt and pepper powder. Adjust the consistency with more water. This is a thick soup.

Step 4

Refrigerate the soup. Serve the soup chilled garnished with toasted almond flakes and black grapes.
