Ingredients list for Chilled Almond Soup

  • 1 cup Almonds blanched and peeled
  • 4 slices Fresh white bread
  • 2 cloves Garlic sliced
  • 5 tablespoons Olive oil
  • 1 1/2 teaspoons Vinegar
  • to taste Salt
  • 1/2 teaspoon Black pepper powder
  • to garnish Almond flakes toasted
  • to garnish Black grapes seedless halved and skinned


  1. Tear the bread slices into a bowl and pour half cup cold water over them. Put the almonds and garlic in a blender and blend to a paste.
  2. Add the soaked bread and olive oil and continue to blend till smooth. Add the vinegar and one cup cold water and blend some more.
  3. Transfer the mixture into a bowl and season with salt and pepper powder. Adjust the consistency with more water. This is a thick soup.
  4. Refrigerate the soup. Serve the soup chilled garnished with toasted almond flakes and black grapes.
