Ingredients
Chickpea bread
- 4 cups chickpea flour (besan)
- Salt to taste
- ½ cup olive oil + drizzling
Toppings - Olive oil for brushing
- 2 tomatoes
- 200 grams bocconcini cheese
- Pizza sauce as required
- Basil leaves for sprinkling
- Crushed black peppercorns
Method
- Preheat the oven at 180˚C.
- In a bowl, add chickpea flour, salt, ½ cup oil, 4 cups water and whisk well.
- For one portion, take a non-stick skillet and drizzle a little oil in it, spread evenly. Place it in the oven for 5-10 minutes to heat and take it out.
- Pour a portion of the mixture in the heated skillet and place it back in the oven to bake for 20-25 minutes.
- Slice tomatoes and set aside. Slice the cheese and set aside.
- Brush olive oil onto the prepared chickpea bread, apply pizza sauce and spread it evenly.
- Place a few tomato slices and a few cheese slices on top. Sprinkle basil leaves, crushed black peppercorns, and bake for 10-15 minutes.
