Ingredients
- 10-12 chicken nuggets, fried
- 3 tablespoons pizza sauce
- ¼ cup grated mozzarella cheese
- 1 tablespoon olive oil
- 10-12 button mushrooms, roughly chopped
- Salt to taste
- Crushed black peppercorns to taste
- ¼ sweet corn, boiled
- ¼ cup finely chopped mixed coloured capsicums
- 1 teaspoon dried red chilli flakes + for sprinkling
- 1 teaspoon dried oregano
Method
- Preheat the oven at 180ºC.
- Heat olive oil in a non-stick pan, add mushrooms, salt and crushed black peppercorns, sauté well. Cook for 3-4 minutes.
- Add sweet corn, capsicums, dried red chilli flakes, dried oregano, pizza sauce and mix well. Cook for 1-2 minutes.
- Place the chicken nuggets on a baking tray, place a portion of the prepared mixture on each nugget.
- Place a portion of the grated mozzarella cheese on top of each nugget and bake till the cheese melts.
- Sprinkle dried red chilli flakes and serve hot.
