Ingredients list for Cheese And Veggie Kabab
- 200 grams Feta Cheese cut into bite sized pieces
- 1/4 medium Bell Pepper cut into bite sized pieces
- 1/4 medium Yellow capsicum cut into bite sized pieces
- 1 medium Zucchini cut into bite sized pieces
- 1/4 Brinjal cut into bite sized pieces
- for garnishing Fresh thyme
- Marinade
- 1 1/2 tablespoons Olive oil
- 1 tablespoon Vinegar
- 1 teaspoon Crushed black peppercorns
- 1 teaspoon Honey
- 1/2 teaspoon Dijon mustard
- 2 teaspoons Fresh thyme chopped
- to taste Salt
Method
- To make the marinade, combine olive oil, vinegar, black peppercorns, honey, mustard, thyme and salt in a bowl. Mix well.
- Add the feta cheese, both the capsicums, zucchini and brinjal pieces in the marinade. Stir to coat well, cover with a plastic wrap and set in the refrigerator for one hour.
- Heat the Grill Pan. Thread one piece of each of the ingredient onto a wooden skewer and place in the grill pan.
- Cook for two to three minutes or till vegetables are tender. Serve hot garnished with thyme sprigs.
