Ingredients list for Cheese And Veggie Kabab

  • 200 grams Feta Cheese cut into bite sized pieces
  • 1/4 medium Bell Pepper cut into bite sized pieces
  • 1/4 medium Yellow capsicum cut into bite sized pieces
  • 1 medium Zucchini cut into bite sized pieces
  • 1/4 Brinjal cut into bite sized pieces
  • for garnishing Fresh thyme
  • Marinade
  • 1 1/2 tablespoons Olive oil
  • 1 tablespoon Vinegar
  • 1 teaspoon Crushed black peppercorns
  • 1 teaspoon Honey
  • 1/2 teaspoon Dijon mustard
  • 2 teaspoons Fresh thyme chopped
  • to taste Salt

Method

  1. To make the marinade, combine olive oil, vinegar, black peppercorns, honey, mustard, thyme and salt in a bowl. Mix well.
  2. Add the feta cheese, both the capsicums, zucchini and brinjal pieces in the marinade. Stir to coat well, cover with a plastic wrap and set in the refrigerator for one hour.
  3. Heat the Grill Pan. Thread one piece of each of the ingredient onto a wooden skewer and place in the grill pan.
  4. Cook for two to three minutes or till vegetables are tender. Serve hot garnished with thyme sprigs.
