How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Celery Soup Recipe

  • Rice noodles 50 grams

  • Celery 1 stalk

  • Salt to taste

  • Oil 1 tablespoon

  • Garlic 1 tablespoon

  • Onion finely chopped 1 small

  • Boneless chicken 100 grams

  • Chicken stock 4 cups

  • Button mushrooms finely chopped 8-10

  • Soy sauce 1 tablespoon

  • Crushed black peppercorns to taste

Method

Step 1

Heat 2 cups water in a non-stick wok. Add salt and boil.

Step 2

Break noodles and add, boil for a minute. Strain the noodles and set aside.

Step 3

Heat oil in a non-stick wok. Add garlic and sauté for a minute. Add onion, stir and sauté on high heat for a minute.

Step 4

Add chicken, mix and sauté on high heat for 2 minutes.

Step 5

Add chopped celery and mix well. Add stock, stir to mix and bring to a boil. Simmer for 3-4 minutes.

Step 6

Add mushrooms and stir. Add soy sauce and salt and mix well. Cook for 2 minutes. Reduce heat and add pepper powder and ginger.

Step 7

Roughly chop celery stalks and add. Switch off heat.

Step 8

Place noodles in individual soup bowl. Pour soup over noodles, garnish with celery leaf and serve piping hot.
