Ingredients list for Caramel Rice

  • 1 1/2 cups Rice soaked and drained
  • 1 cup Castor sugar
  • 2 tablespoons Ghee
  • 2 one-inch pieces Cinnamon sticks
  • 10-15 Almonds blanched and peeled
  • 3 cups Orange juice

Method

  1. Heat sugar in a non-stick pan, add ¼ cup water and mix well and cook till sugar caramelises.
  2. Heat ghee in another non-stick pan, add cinnamon pieces and almonds and sauté for a minute. Switch off the heat.
  3. Add orange juice to the 1st pan. Add rice and the ghee mixture and mix well. Cook, stirring at intervals, till the rice is done.
  4. Transfer onto a serving plate and serve hot.
