Ingredients list for Bruschetta
- 1 French Bread
- as required Mushrooms
- 2 tablespoons Olive oil
- 10-12 Garlic cloves finely chopped
- 2 tablespoons Walnuts toasted
- 1 cup Mushrooms finely chopped
- 2 tablespoons Raisins
- a few sprigs Parsley
- 100 millilitres Extra virgin olive oil
Method
- Preheat oven at 180° C. Cut the French bread into long slices and toast till they become golden brown.
- Heat olive oil in a non-stick pan. Add garlic to the pan and sauté till fragrant.
- Chop walnuts. Add mushrooms to the pan and cook on a high heat.
- Roughly chop raisins. When mushrooms turn light brown, add raisins and walnuts and mix.
- Finely chop parsley and add to the mushroom mixture.
- Rub a garlic clove on each bread slice, place them on a plate.
- Drizzle extra virgin olive oil and toast them in the preheated oven till crisp.
- Grate some parmesan cheese over the toasted bread slices.
- Cover the bread slices with the mushroom mixture.
- Grate some more parmesan cheese over the mushroom mixture and serve immediately.
