Ingredients
- 1 medium broccoli, cut into small florets
- ½ cup grated cheddar cheese
- 2 tablespoons butter
- 5-6 garlic cloves, finely chopped
- 1 medium onion, chopped
- 1 medium carrot, peeled and chopped
- 2 tablespoons refined flour
- 1 cup milk
- 3 cups vegetable stock
- Salt to taste
- Crushed black peppercorns to taste
- ½ cup fresh cream
Method
- Heat the butter in a non-stick pan. Add the garlic and sauté for thirty seconds. Add the onion and carrot and sauté till the carrots are cooked.
- Add the flour and whisk well. Add the milk, vegetable stock and broccoli, mix well and bring to a boil. Reduce heat and simmer for two to three minutes.
- Add the salt and crushed peppercorns, mix well and cook for three to four minutes. Add cream and mix well.
- Serve hot.
