Ingredients

  • 1 medium broccoli, cut into small florets
  • ½ cup grated cheddar cheese
  • 2 tablespoons butter
  • 5-6 garlic cloves, finely chopped
  • 1 medium onion, chopped
  • 1 medium carrot, peeled and chopped
  • 2 tablespoons refined flour
  • 1 cup milk
  • 3 cups vegetable stock
  • Salt to taste
  • Crushed black peppercorns to taste
  • ½ cup fresh cream 

Method

  1. Heat the butter in a non-stick pan. Add the garlic and sauté for thirty seconds. Add the onion and carrot and sauté till the carrots are cooked.
  2. Add the flour and whisk well. Add the milk, vegetable stock and broccoli, mix well and bring to a boil. Reduce heat and simmer for two to three minutes. 
  3. Add the salt and crushed peppercorns, mix well and cook for three to four minutes. Add cream and mix well.
  4. Serve hot.
