Ingredients list for Broccoli & Cheese Soup

  • 2 medium Broccoli
  • 8-12 Bocconcini , small pieces
  • 3 tablespoons Butter
  • 1 medium Onion
  • 1 medium Onion
  • 8-10 cloves Garlic
  • to taste Salt
  • to taste Black peppercorns , crushed
  • 1 cup Milk
  • 2 teaspoons Olive oil
  • to serve Bread slices
  • to garnish Fresh parsley sprig

Method

  1. Separate small florets from broccoli and discard their stems.
  2. Put butter in a soup maker. Roughly chop onion and add. Add garlic cloves, broccoli florets, vegetable stock, salt and crushed black peppercorns and cover with the lid.
  3. Select the desired option and let it cook for 4-6 minutes.
  4. Remove the lid and add milk, cover with lid, select the option and cook till the soup is done.
  5. Heat oil in a non-stick pan, keep the bread slices in it and cook, turning sides, till crisp on both sides. Keep them on a plate.
  6. Place 2-3 bocconcini pieces at the bottom of each serving bowl and pour the soup over. Garnish each bowl with a fresh parsley sprig and serve hot with toasted bread slices.
