Ingredients list for Brandy Snap Basket
- ¼ cup Golden syrup
- ½ cup Refined flour (maida)
- ¼ cup Butter
- ½ inch Ginger finely chopped
- ½ cup Castor sugar (caster sugar)
- ¼ cup Blueberries fresh
- 6-8 Strawberries roughly chopped
- as required Vanilla ice cream
- for garnishing Fresh mint sprigs
Method
- Preheat oven to 180° C. Line a baking tray with silicon mat.
- Cream together butter, ginger and castor sugar in a bowl with an electric beater. Add golden syrup and whisk. Add flour and whisk well.
- Divide the mixture into small equal portions and arrange them on the lined baking tray keeping a little distance between each.
- Place the baking tray in the preheated oven and bake for 8-10 minutes. Remove from oven, place each baked portion on an inverted bowl, lightly press to shape into a bowl and set aside to cool. Demould the baskets.
- Place the baskets on a serving platter and put some blueberries and strawberries. Place a scoop of vanilla ice cream on top and garnish with mint sprigs.
- Serve immediately.
