Brandy Snap Basket

Ginger flavoured dough roundels baked, shaped into baskets, filled with mixed berries and vanilla ice cream. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Brandy Snap Basket

  • ¼ cup Golden syrup
  • ½ cup Refined flour (maida)
  • ¼ cup Butter
  • ½ inch Ginger finely chopped
  • ½ cup Castor sugar (caster sugar)
  • ¼ cup Blueberries fresh
  • 6-8 Strawberries roughly chopped
  • as required Vanilla ice cream
  • for garnishing Fresh mint sprigs

Method

  1. Preheat oven to 180° C. Line a baking tray with silicon mat.
  2. Cream together butter, ginger and castor sugar in a bowl with an electric beater. Add golden syrup and whisk. Add flour and whisk well.
  3. Divide the mixture into small equal portions and arrange them on the lined baking tray keeping a little distance between each.
  4. Place the baking tray in the preheated oven and bake for 8-10 minutes. Remove from oven, place each baked portion on an inverted bowl, lightly press to shape into a bowl and set aside to cool. Demould the baskets.
  5. Place the baskets on a serving platter and put some blueberries and strawberries. Place a scoop of vanilla ice cream on top and garnish with mint sprigs.
  6. Serve immediately.
