Ingredients for Brandy Snap Basket Recipe

  • Golden syrup ¼ cup

  • Refined flour (maida) ½ cup

  • Butter ¼ cup

  • Ginger finely chopped ½ inch

  • Castor sugar (caster sugar) ½ cup

  • Blueberries fresh ¼ cup

  • Strawberries roughly chopped 6-8

  • Vanilla ice cream as required

  • Fresh mint sprigs for garnishing

Method

Step 1

Preheat oven to 180° C. Line a baking tray with silicon mat.

Step 2

Cream together butter, ginger and castor sugar in a bowl with an electric beater. Add golden syrup and whisk. Add flour and whisk well.

Step 3

Divide the mixture into small equal portions and arrange them on the lined baking tray keeping a little distance between each.

Step 4

Place the baking tray in the preheated oven and bake for 8-10 minutes. Remove from oven, place each baked portion on an inverted bowl, lightly press to shape into a bowl and set aside to cool. Demould the baskets.

Step 5

Place the baskets on a serving platter and put some blueberries and strawberries. Place a scoop of vanilla ice cream on top and garnish with mint sprigs.

Step 6

Serve immediately.
