Bhindi Kadhi

Ingredients

  • 250 grams lady fingers                        
  • 1/2 cup gram flour (besan)                
  • 2 cups yogurt                        
  • 2 teaspoons green chilli-ginger-garlic paste        
  • 1 teaspoon turmeric powder                
  • Salt to taste                        
  • 1 tablespoon oil                        
  • ½ teaspoon asafoetida (hing)                
  • 1/2 teaspoon mustard seeds                    
  • 1/2 teaspoon cumin seeds                    
  • 2 dried red chillies, broken              
  • 4-6 curry leaves                     

Method 

  1. Trim bhindi. Cut into one inch pieces.
  2. Mix the besan with the yogurt adding the green chilli-ginger-garlic paste, turmeric powder and salt. Whisk well. 
  3. Heat oil in a pan. Add hing, mustard seeds, cumin seeds and sauté till seeds begin to crackle. Add dry red chillies and sauté. 
  4. Add curry leaves and bhindi. Mix well and sauté for two to three minutes.
  5. Add the yogurt mixture and stir thoroughly. Cook on low heat, stirring continuously, till mixture thickens.
  6. Add a little water and cook till it comes to a boil.
  7. Serve hot.
