Ingredients
- 250 grams lady fingers
- 1/2 cup gram flour (besan)
- 2 cups yogurt
- 2 teaspoons green chilli-ginger-garlic paste
- 1 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon oil
- ½ teaspoon asafoetida (hing)
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 2 dried red chillies, broken
- 4-6 curry leaves
Method
- Trim bhindi. Cut into one inch pieces.
- Mix the besan with the yogurt adding the green chilli-ginger-garlic paste, turmeric powder and salt. Whisk well.
- Heat oil in a pan. Add hing, mustard seeds, cumin seeds and sauté till seeds begin to crackle. Add dry red chillies and sauté.
- Add curry leaves and bhindi. Mix well and sauté for two to three minutes.
- Add the yogurt mixture and stir thoroughly. Cook on low heat, stirring continuously, till mixture thickens.
- Add a little water and cook till it comes to a boil.
- Serve hot.
