Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bharwan Bhindi Masala Recipe

  • Ladyfingers trimmed and slit vertically without cutting throug 250 grams

  • Coriander seeds 1 tablespoon

  • Black peppercorns 10-15

  • Fennel seeds 1 tablespoon

  • Cumin seeds 1 teaspoon

  • White sesame seeds 1 tablespoon

  • Dried red chillies 3

  • Medium onions peeled, cut into 1 inch cubes and layers separated 2

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Red chilli powder 1/2 teaspoon

  • Oil 2 tablespoons

  • Fresh coriander sprig to garnish

Method

Step 1

Take coriander seeds, black peppercorns, fennel seeds, cumin seeds, white sesame seeds and dried red chillies in a mixer jar and grind to a fine powder.

Step 2

Stuff the ladyfingers with some of this masala powder and sprinkle some of the remaining masala over them. Add onion, remaining masala powder, turmeric powder, salt and red chilli powder and toss well.

Step 3

Heat oil in a deep non-stick pan, add the ladyfingers and mix well. Cook on medium heat, stirring occasionally, for 8-10 minutes or till the ladyfingers are well done.

Step 4

Transfer into a bowl, garnish with coriander sprig and serve hot.
