Ingredients list for Bao - SK Khazana
- 2 cups + for dusting Refined flour (maida)
- 2 teaspoons Fresh yeast
- 1 teaspoon Salt
- 1/4 teaspoon Baking powder
- 2 tablespoons Milk powder
- 1 tablespoon Castor sugar
- 3 tablespoons Melted butter
Method
- Put yeast in a bowl. Add some warm water, mix and set aside to activate.
- Sift together flour, salt and baking powder into a bowl. Add milk powder and castor sugar and mix well.
- Add activated yeast and mix. Add sufficient water, mix and knead into a soft dough. Add melted butter and knead again. Cover with a damp muslin cloth and set aside to prove for 20-25 minutes.
- Knock back the dough.
- Spray some oil on the worktop. Place the dough on it and roll out into a thick disc. Cut out small roundels with a small cookie cutter.
- Spray some oil on them and fold each roundel into half keeping a piece of butter paper in between. Flatten a bit and set aside to prove for 5 minutes.
- Heat sufficient water in a large pan. Place the baos in a bamboo steamer, keep the steamer in the pan and steam for 3-5 minutes.
- Remove the butter paper and use as required.
