Ingredients list for Apricot Upside Down Pudding
- 200 grams Golden apricots dried
- 1 cup Whole wheat flour (atta) for dusting
- 125 grams Butter
- 1 teaspoon Baking powder
- 1 teaspoon Cinnamon powder
- 125 grams Brown sugar
- 1 Egg broken
- 3 tablespoons Milk
- 4 tablespoons Honey
- 200 grams Canned peaches chopped
Method
- Preheat oven to 180°C. Grease an aluminium cake tin with little butter and dust with a little flour.
- Sift together flour, baking powder and cinnamon powder into a bowl.
- Cream butter and brown sugar in another bowl till light and fluffy.
- Add egg and keep beating. Add sifted ingredients and mix well. Add milk and mix again.
- Pour honey in the prepared tin and spread it all over.
- Mix apricots and peaches in a bowl and mix well. Transfer this over the honey in the tin and spread evenly.
- Pour batter over the fruits and spread evenly. Pat the tin lightly.
- Place it in the preheated oven and bake for 30-40 minutes.
- Remove from oven. Turn upside down on a plate, slice and serve.
