Ingredients list for Apricot Icecream
- 1 cup Dried apricots soaked in warm water
- 100 grams Sugar
- 4 Egg yolks
- 350 millilitres Cream
- For praline
- 100 grams Almonds chopped
- 100 grams Sugar
Method
- Puree apricots and put into a non-stick pan. Add sugar and cook, stirring, for five minutes.
- Put egg yolks in a bowl and beat well, add apricot puree and whisk till thick.
- Cool and add cream and mix well.
- Pour into an icecream box, close with the lid and freeze, beating at regular intervals (so as to prevent formation of ice crystals) until set.
- Serve with praline.
- To make praline, melt sugar in a heavy non-stick pan. Add almonds, mix and cook over a low heat for about ten minutes. Pour into an oiled tray and let it set.
- Crush with a rolling pin and sprinkle over ice cream before serving.
