Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Aloo Fingers Recipe

  • Medium potatoes boiled and peeled 2

  • Samo cooked 1 cup

  • Ginger-garlic paste 1 tablespoon

  • Rock salt (sendha namak) to taste

  • Fresh coriander leaves chopped 2 tablespoons

  • Amaranth flour 2 tablespoons

  • Oil to deep fry

  • Green chutney to serve

Method

Step 1

Take cooked samo in a bowl, add ginger-green chilli paste, rock salt, coriander leaves and amaranth flour. Grate the potatoes into the bowl and mix well.

Step 2

Divide the mixture into equal portions and shape each portion into medium sized finger.

Step 3

Heat sufficient oil in a kadai, slide in the aloo fingers and deep fry on high heat till golden brown and crisp. Drain on absorbent paper.

Step 4

Arrange the aloo fingers on a serving platter and serve hot with green chutney.
