Ingredients list for Aloo Fingers

  • 2 Medium potatoes boiled and peeled
  • 1 cup Samo cooked
  • 1 tablespoon Ginger-garlic paste
  • to taste Rock salt (sendha namak)
  • 2 tablespoons Fresh coriander leaves chopped
  • 2 tablespoons Amaranth flour
  • to deep fry Oil
  • to serve Green chutney


  1. Take cooked samo in a bowl, add ginger-green chilli paste, rock salt, coriander leaves and amaranth flour. Grate the potatoes into the bowl and mix well.
  2. Divide the mixture into equal portions and shape each portion into medium sized finger.
  3. Heat sufficient oil in a kadai, slide in the aloo fingers and deep fry on high heat till golden brown and crisp. Drain on absorbent paper.
  4. Arrange the aloo fingers on a serving platter and serve hot with green chutney.
