Ingredients
- 12-15 French beans, stringed & cut into small pieces
- 1 medium potato, cut into cubes
- 2 tablespoons sesame oil
- 3-4 dried red chillies
- 1 teaspoon mustard seeds
- 2 teaspoons split black gram skinless (dhuli urad dal)
- 8-10 curry leaves
- 2 medium onions, chopped
- Salt to taste
- 1 inch ginger piece, chopped
- 1½ tablespoons scraped coconut + for garnishing
Method
- Heat oil in a non-stick pan.
- Cut dried red chillies into pieces and remove extra seeds.
- Add mustard seeds, urad dal, curry leaves and dried red chilli pieces to the pan. Mix and add onions. Sauté for 2-3 minutes.
- Add potato and salt. Mix well, cover and cook till potato is soft.
- Add beans and ginger. Mix well and add 5-6 tablespoons of water. Mix and cook till done.
- Add scraped coconut and mix well. Remove from heat.
- Serve hot garnished with scraped coconut.
