Ingredients list for Conkies
- 1/2 cup Pumpkin
- 1/2 cup Coconut grated
- 1/2 cup Sweet potato grated
- 1/2 cup Sugar
- 1 teaspoon Nutmeg powder
- 1 teaspoon All spice powder
- 1 teaspoon Almond essence
- 5 tablespoons Raisins
- 1 cup Refined flour (maida)
- 1 cup Cornflour/ corn starch
- 1 teaspoon Salt
- 4 tablespoons Melted butter
- 1 cup Milk
- Banana leaves cut into square pieces
Method
- Mix together coconut, pumpkin, sweet potato, sugar, nutmeg powder, allspice powder, almond essence, raisins, refined flour, cornflour and salt in a bowl. Add melted butter and milk and mix till smooth.
- Remove the stems of the banana leaves and roast them lightly on the gas flame.Heat Bisleri water in a steamer. Place a portion of the stuffing in the centre of the banana leaf. Fold the leaf to make a parcel.
- Similarly use up all stuffing. Place the parcels on a perforated plate, keep it in the steamer and steam for 30 minutes. Remove from the steamer and open the parcels. Transfer onto a serving plate and serve.
