Zatar Bread Zatar spice gives this bread a lovely flavour. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 07 Mar 2017 in Recipes Course New Update Main Ingredients Refined flour (maida), Zatar Spice Cuisine Middle Eastern Course Breads Prep Time 41-50 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Zatar Bread 2 cups + for dusting Refined flour (maida) 1 tablespoon Zatar Spice 1 teaspoon Fresh yeast a pinch Castor sugar (caster sugar) ½ teaspoon Salt 2 tablespoons Olive oil Method Take yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix and set aside to activate. Take flour and salt in another bowl and mix. Make a well in the centre, add activated yeast and mix. Add some water and knead into a dough. Add 1 tablespoon olive oil and knead into a soft dough. Cover with damp muslin cloth and set aside to prove for 20-25 minutes. Preheat oven to 180° C. Transfer the dough on the worktop and knock back to release excess air. Divide into equal portions and shape them into balls. Dust the worktop with some flour, roll out each portion into ½ cm thick discs and place on a baking tray.Place the baking tray in the preheated oven and bake for 5 minutes. Take zatar spice in another bowl. Add remaining olive oil and mix well. Remove tray from oven, apply some zatar spice mixture on top, place the tray back in the preheated oven and bake for another 5 minutes.
