Ingredients for Walnut Biscotti Recipe

  • Walnut Kernels chopped 1 cup

  • Refined Flour diced 115 grams

  • Castor sugar (caster sugar) 3/4 cups + tablespoons

  • Eggs 2

  • Walnut oil or olive oil 1 tablespoon

  • Refined flour (maida) 2 3/4 teaspoons

  • Baking powder 1 1/2 teaspoon

  • Whole wheat flour (atta) 1/2 cup

Method

Step 1

Preheat the oven to 160°C/325°F/Gas Mark 3. Cream the butter and caster sugar in a bowl until light and fluffy. Add the eggs and walnut oil or olive oil and mix well.

Step 2

Sift the refined flour and baking powder together over the mixture in the bowl. Add the wheat flour and walnut halves. Mix well and knead into a soft, but not sticky dough. Shape the dough into four logs, seven inches long and two inches in diameter.

Step 3

Place the logs a little apart on the baking tray. Bake for about thirty five minutes or until golden in colour. Remove from the oven and transfer the logs to a wire rack to cool for about ten minutes .Slice each log diagonally into half inch thick slices.

Step 4

Place the slices on the baking tray for another fifteen minutes. Remove from the oven and transfer the biscotti to a wire rack to cool. Store in airtight tins.
