By Sanjeev Kapoor 16 Apr 2016 in Recipes Course New Update Main Ingredients Pure fruit juice blend, Gelatin Cuisine British Course Desserts Prep Time 6-10 minutes Cook time 3.30-4 hour Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Tropical Jelly 5 cups Pure fruit juice blend packaged 2 tablespoons Gelatin 6 tablespoons Lemon juice 10-12 Lychees tinned 1-2 Passion fruit optional Method Pour two cups of fruit juice into a shallow dish. Sprinkle gelatin, pressing it down so the liquid covers it, and set it aside to soften. It will take about ten minutes. Pour another cup of juice into a small saucepan and bring it up to simmering point. Remove pan from heat and add softened gelatin, squeezing it first and reserving the liquid, and begin to whisk the gelatin in until it is completely dissolved. Pour remaining juice into a large jug, along with lemon juice and the liquid from the squeezed gelatin. Add the dissolved gelatin mixture. Whisk briskly. Pour this mixture into four tall glasses. Cover, and chill for at least three hours or, preferably, overnight. Drain and chop lychees. Just before serving, halve passion fruit and scoop out pulp. Place lychees and passion fruit pulp on top of the jellies - the fruit will seep down as you eat.
