Ingredients list for Tomato and Olive Rice
- 1 1/2 cups Basmati rice soaked for 1 hour
- 10-12 Olive oil
- 1 bottle Black olives sliced
- 1 bottle Green olives sliced
- 2 tablespoons Extra virgin olive oil
- 1 teaspoon Garlic chopped
- 2 medium Onions sliced
- 7-8 Black peppercorns
- to taste Crushed black peppercorns
- 2 cups Vegetable stock
- 1 cup Tomato puree
- to taste Salt
- 20-25 Fresh basil leaves
Method
- Set a rice cooker on cook mode and heat extra virgin olive oil in it. Add garlic, onions, cherry tomatoes, black peppercorns, crushed black peppercorns and mix well. Saute for 2-3 minutes.
- Drain and add black and green olives and mix well. Drain and add rice, vegetable stock, tomato puree and mix well. Add salt and mix well.
- Roughly tear basil leaves and add. Mix well, cover and cook till rice is done. Serve hot.
