Hindi: chawal
How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

  • Sugar 1/4 cup

  • Unsalted butter 2 tablespoons

  • Orange juice 1 cup + 4 tablespoons

  • Raisins 1 tablespoon

  • Dates chopped 8-10

  • Walnut kernels crushed 8-10

  • Cornflour/ corn starch 1 1/2 teaspoons

Step 1

Melt butter in a wok, add rice and sugar and mix. Heat one cup orange juice in another pan. Add raisins and let it simmer on low heat.

Preheat oven to 180°C. Grease a glass bowl or a small spring form tin. Mix dates and walnuts in a bowl and crush them with your fingers till they form a lump.

Cover with the remaining rice and even the surface. Sprinkle the remaining orange juice on the top and cook it in the preheated oven for fifteen minutes. Loosen the rice from the spring form tin and place on a serving dish.
