With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soya Nugget Do Piaza Recipe

  • Soya nuggets , soaked for 30 minutes, drained and squeezed 1 cup

  • Onions 3 medium

  • Shallots 15-20

  • Oil 4 tablespoons

  • Ginger , chopped 1 tablespoon

  • Garlic , chopped 1 tablespoon

  • Coriander powder 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Bhuna masala 130 grams

  • Fresh coriander leaves a few sprigs

  • Fresh cream 2 tablespoons


Step 1

Heat 2 tbsps oil in a deep non-stick pan and 2 tbsps oil in a shallow non-stick pan. Halve onions and cut each half into 4 pieces.

Step 2

Add shallots to shallow pan, cover and cook.

Step 3

Add the onion pieces to the deep pan and toss. Add ginger and garlic, mix and saute till lightly coloured.

Step 4

Add soya nuggets, coriander powder, turmeric powder and red chilli powder and mix well. Add bhuna masala and 2-3 tbsps water and mix well.

Step 5

When the shallots in the other pan turn a light brown, switch the heat off.

Step 6

Add salt to the soya nuggets and mix well.

Step 7

Chop coriander leaves and add and mix well. Cover and cook for 3-4 minutes. Add cream and mix.

Step 8

Transfer into a serving dish, put the shallots on top and serve hot.
