Ingredients list for Sea Salt Roasted Baby Potatoes

  • 25-30 Baby potatoes parboiled with skin and pricked with fork
  • 2 tablespoons Sea salt
  • 1/4 teaspoon Crushed black peppercorns
  • 2 tablespoons Crushed red chillies
  • 1 1/2 tablespoons Garlic finely chopped
  • 1/2 teaspoon Mixed herbs
  • 1/2 tablespoon Olive oil
  • 16-18 Cherry tomatoes

Method

  1. Preheat oven at 180° C. Mix potatoes, sea salt, crushed peppercorns, crushed red chillies, garlic, herbs and olive oil in a bowl.
  2. Transfer marinated potatoes into baking dish.
  3. Add cherry tomatoes and place in the preheated oven at and cook for ½ hour. Serve hot.
