Ingredients for Roasted Leg Of Lamb With Garlic And Rosemary Recipe

  • Leg of lamb 1

  • Rosemary 1/4 cup

  • Fresh rosemary chopped 3 tablespoons

  • Salt 1 tablespoon

  • Black peppercorns coarsely ground 2 teaspoons

  • Garlic minced 8 cloves

  • Olive oil 2 tablespoons

  • Carrots roughly chopped 2

  • Celery roughly chopped 2 stalks

  • Onions roughly chopped 2 medium

Method

Step 1

Preheat the oven to 500°F. In a bowl mix together lemon juice, rosemary leaves, salt and coarsely ground black peppercorns. With the help of the pairing knife make small slits all over the lamb.

Step 2

Press the minced garlic into the slits. Rub the above mixture all over the meat and then coat it with olive oil. Grease a large roasting pan and then arrange the carrots, celery and onions on it.

Step 3

Put the leg in the pan and then put the pan in the oven and roast the lamb for ten minutes. Turn the lamb and roast for another ten minutes.

Step 4

Lower the temperature of the oven to 325°F and cook till the lamb is medium done or till slightly pink. Remove the lamb from the oven and cover it loosely with foil before slicing.
