Ingredients for Pumpkin and Walnut Soup - SK Khazana Recipe

  • Pumpkin peeled and sliced 2 cups

  • Walnuts 1/4 cup

  • Olive oil 2 tablespoons

  • Medium onions chopped 2

  • Garlic cloves 6-7

  • Castor sugar 1 teaspoon

  • Curry powder 1 1/2 tablespoons

  • Salt to taste

  • White pepper powder 1 teaspoon

  • Vegetable stock 2 cups

  • Lemon juice 1 tablespoon

  • Fresh cream 1/2 cup

  • Fresh parsley chopped to garnish

Method

Step 1

Heat olive oil in a pressure cooker, add onions and garlic, mix and sauté till fragrant. Add pumpkin, mix and sauté for 3-4 minutes.

Step 2

Add castor sugar, curry powder, salt, white pepper powder and walnuts and mix well. Add 1 cup vegetable stock and lemon juice and mix well. Cover the cooker with the lid and cook under pressure till 2 whistles are given out.

Step 3

Open the lid when the pressure settles completely and blend the pumpkin mixture with a hand blender to a fine puree.

Step 4

Strain the puree into a deep non-stick pan, add 1 cup vegetable stock to get the required consistency, mix and bring it to a boil.

Step 5

Add fresh cream and mix well. Add parsley and mix well. Transfer into serving soup bowls, garnish with parsley and serve hot.
