Ingredients list for Pumpkin and Walnut Soup - SK Khazana

  • 2 cups Pumpkin peeled and sliced
  • 1/4 cup Walnuts
  • 2 tablespoons Olive oil
  • 2 Medium onions chopped
  • 6-7 Garlic cloves
  • 1 teaspoon Castor sugar
  • 1 1/2 tablespoons Curry powder
  • to taste Salt
  • 1 teaspoon White pepper powder
  • 2 cups Vegetable stock
  • 1 tablespoon Lemon juice
  • 1/2 cup Fresh cream
  • to garnish Fresh parsley chopped

Method

  1. Heat olive oil in a pressure cooker, add onions and garlic, mix and sauté till fragrant. Add pumpkin, mix and sauté for 3-4 minutes.
  2. Add castor sugar, curry powder, salt, white pepper powder and walnuts and mix well. Add 1 cup vegetable stock and lemon juice and mix well. Cover the cooker with the lid and cook under pressure till 2 whistles are given out.
  3. Open the lid when the pressure settles completely and blend the pumpkin mixture with a hand blender to a fine puree.
  4. Strain the puree into a deep non-stick pan, add 1 cup vegetable stock to get the required consistency, mix and bring it to a boil.
  5. Add fresh cream and mix well. Add parsley and mix well. Transfer into serving soup bowls, garnish with parsley and serve hot.
