Ingredients for Prawn On Sugarcane Stick Recipe

  • Prawns shelled and deveined 300 grams

  • Sugarcane sticks each six inches long 4

  • Salt 1 teaspoon

  • Flaked white fish fillet 1/4 cup

  • Sugar 1 teaspoon

  • Garlic 3 cloves

  • Fresh red chillies 2

  • Lime juice 1 tablespoon

  • FOR SAUCE

  • Garlic chopped 3 cloves

  • Fresh red chillies finely chopped 2

  • Salt to taste

  • Sugar 1 1/2 teaspoons

  • Vinegar 2 tablespoons

  • Soy sauce 1 teaspoon

Method

Step 1

Put the prawns in a mixer container. Add fish, salt, sugar, garlic, fresh red chillies and lemon juice and grind to a fine mixture.

Step 2

Transfer into a bowl and divide into four portions. Dampen your hand and take each portion of the fish mixture and wrap around a sugarcane stick.

Step 3

Heat a grill pan and place these sticks on the pan and grill. Brush a little oil on the surface, flip and continue to grill till both the sides are evenly golden.

Step 4

To make the sauce, put the garlic in a bowl. Add fresh red chillies, salt, sugar and vinegar and mix well. Add soy sauce and mix well. Let it stand for at least half an hour before using.

Step 5

Put the sauce in small serving bowls, place one prawn on sugarcane stick in each bowl and serve.
