The Bengalis are great food lovers and take pride in their cuisine.  In fact so obsessed are they about food, that the man of the house goes to the market daily to buy a fresh supply vegetables and fish which is a must in their daily menu.  The medium of cooking is mustard oil which adds its own pungency.  Another very important item of Bengali cuisine is the variety of sweets or mishti as they call them.  Most of them are milk based and are prepared from chhena.
A meal, for the Bengali, is a ritual in itself.  Bengalis spend not only the great deal of time thinking about the food but also on its preparation and eating.

Ingredients for Pista Sandesh Recipe

  • Cow’s milk 1 litre

  • Castor Sugar 1/4 teaspoon

  • Castor sugar (caster sugar) 1/2 teaspoon

  • Pistachios 10

  • Pistachios powdered 2 tablespoons

Method

Step 1

Boil milk. Mix citric acid in water and gradually add it to milk till the milk curdles. Strain the paneer through a clean cloth and cool.

Step 2

Squeeze out the excess water. Roast paneer with sugar in a pan for about five minutes taking care that the colour of paneer does not change.

Step 3

Grind this mixture in a mixie till it is soft and light (without adding water). Add powdered pistachios and mix well.

Step 4

Divide into sixteen equal portions and shape into round balls. Decorate with whole pistachios and serve.
