  • 1 cup Refined flour sifted
  • 2 cups Coconut milk Thick

Method

  1. Take refined flour in a bowl, add thick coconut milk and salt and mix well. Add the eggs and whisk it well. Add little water and mix to get a batter of pouring consistency.
  2. Heat a pan, grease with butter and pour a ladle of batter. Rotate the pan so that the batter spreads evenly to make a thin round pancake. Cook till the underside is lightly browned. Flip and cook till the other side is evenly cooked too. Transfer onto a p
  3. Similarly prepare pancakes with the remaining batter.
  4. Heat butter in another pan, add pineapple, coconut and brown sugar and mix well. Cook on medium for eight to ten minutes. Place a pancake on a serving plate, place some of the coconut filling in the centre.
  5. Fold one side of the pancake over the filling, then bring in the top and bottom edges and further roll it into a cylinder. Repeat similarly for the other pancakes.
  6. Cut into small pieces and serve.
