History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pidde Recipe

  • Refined flour (maida) 1 kilograms

  • Buttermilk as required

  • Soda bicarbonate 1/2 teaspoon

  • Salt to taste

  • Yeast 2 teaspoons

Method

Step 1

Sieve refined flour and soda bicarbonate together. Soak yeast in quarter cup of lukewarm water and set aside till it begins to froth.

Step 2

Make a well in the flour mixture and pour the yeast mixture into it.Mix in the flour.

Step 3

Add two and three fourth cups of water and knead into a soft dough.Cover with a damp cloth and set aside for the dough to rise.

Step 4

Divide the dough into ten to twelve equal portions.Take each portion on a lightly floured board and pat with your fingers to a round disc.

Step 5

It should not be too thin.Brush the top with some thin buttermilk.

Step 6

Using only your finger tips press lightly to make groves all around.Place the pidde on a long wooden spatula and put it in the tandoor to bake. Serve hot.
