Ingredients list for Peppery Corns And Tomato Salad
- 2 cups Corn kernels
- 1 medium Yellow capsicum 1 cm cubes
- 2 medium Green capsicum 1 cm cubes
Method
- Boil corn kernels in salted water until soft. Drain thoroughly and cool. You may also use precooked canned corn kernels or sweet corn niblets.
- Combine corn kernels, yellow capsicum, green capsicum, tomatoes and pineapple. Stir in lemon juice and add crushed peppercorns, salt, chopped green chillies and chopped mint leaves.
- Arrange in a serving dish and chill in the refrigerator before serving.
