Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Peppery Corns And Tomato Salad Recipe

  • Corn kernels 2 cups

  • Yellow capsicum 1 cm cubes 1 medium

  • Green capsicum 1 cm cubes 2 medium

  • Tomatoes 1 cm cubes 3 medium

  • Pineapple 1 cm cubes 4 slices

  • Lemon juice 2 tablespoons

  • Black peppercorns crushed 15-20

  • Salt to taste

  • Green chillies chopped 1-2

  • Fresh mint leaves chopped 1/2 cup

Method

Step 1

Boil corn kernels in salted water until soft. Drain thoroughly and cool. You may also use precooked canned corn kernels or sweet corn niblets.

Step 2

Combine corn kernels, yellow capsicum, green capsicum, tomatoes and pineapple. Stir in lemon juice and add crushed peppercorns, salt, chopped green chillies and chopped mint leaves.

Step 3

Arrange in a serving dish and chill in the refrigerator before serving.
