Ingredients for Penne With Roasted Peppers, Tomato And Basil Salsa Recipe

  • Penne pasta 200 grams

  • Tomato concasse

  • Green capsicum roasted 1 medium

  • Yellow capsicum roasted 1 medium

  • Red capsicum roasted 1 medium

  • Tomato concasse 2 cups

  • Fresh basil leaves hand torn 10-12

  • Olive oil 1 tablespoon

  • Onions chopped 2 medium

  • Garlic crushed 10 cloves

  • Salt to taste

  • Jalapenos sliced 2

  • Black olives sliced 3-4

Method

Step 1

Heat water in a deep non stick pan.

Step 2

Keep a strainer on it and put the penne in it and cook.

Step 3

Heat the oil in a non stick pan. Add onions and garlic and sauté till golden. Add the tomato concasse and half a cup of water and stir. Add salt and cook.

Step 4

Peel the roasted capsicums, remove seeds and chop roughly. Add to the tomatoes. Add jalapenos, black olives and basil leaves and mix well.

Step 5

Lift the strainer with the penne from the pan, let all the water drain off and add to the sauce in the pan.

Step 6

Mix well and serve hot or cold.
