Ingredients list for Onion and Thyme Soup

  • 3 medium Onion sliced
  • 2 tablespoons Fresh Thyme leaves
  • 1 1/2 tablespoons Butter
  • 1 1/2 tablespoons Refined flour (maida)
  • 4 cups Vegetable stock
  • to taste Salt
  • 1/2 teaspoon Black pepper powder
  • 2 tablespoons Spring onion greens finely chopped
  • 1 teaspoon Lemon juice

Method

  1. Heat butter in a deep non-stick pan, add onions and sauté till they turn light brown.
  2. Add thyme, mix and sauté on low heat. Add refined flour, mix well and sauté for a minute.
  3. Add stock, mix and bring the mixture to a boil. Cover and simmer for five minutes.
  4. Add salt, pepper powder and mix. Cover and simmer for two minutes.
  5. Add one tablespoon spring onion greens and lemon juice and mix well. Switch off heat.
  6. Transfer into individual soup bowls, garnish with remaining spring onion greens and serve piping hot.
