Ingredients for Onion and Thyme Soup Recipe

  • Onion sliced 3 medium

  • Fresh Thyme leaves 2 tablespoons

  • Butter 1 1/2 tablespoons

  • Refined flour (maida) 1 1/2 tablespoons

  • Vegetable stock 4 cups

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

  • Spring onion greens finely chopped 2 tablespoons

  • Lemon juice 1 teaspoon


Step 1

Heat butter in a deep non-stick pan, add onions and sauté till they turn light brown.

Step 2

Add thyme, mix and sauté on low heat. Add refined flour, mix well and sauté for a minute.

Step 3

Add stock, mix and bring the mixture to a boil. Cover and simmer for five minutes.

Step 4

Add salt, pepper powder and mix. Cover and simmer for two minutes.

Step 5

Add one tablespoon spring onion greens and lemon juice and mix well. Switch off heat.

Step 6

Transfer into individual soup bowls, garnish with remaining spring onion greens and serve piping hot.
