Ingredients list for Oat Muffins

  • 2 cups refined flour (maida)
  • Saffola Veggie Twist Oats 1 packet (40 grams)
  • to taste Salt
  • 1 teaspoon black pepper powder
  • 1 tablespoon dill leaves finely chopped
  • 1 cup spinach leaves chopped
  • 1/2 cup green peas
  • 1 medium green zucchini, grated
  • 1/2 cup grated ricotta cheese
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/4 cup milk

Method

  1. Preheat oven at 180°C. Combine Saffola Veggie Twist Oats, salt, pepper powder, dill leaves, spinach, green peas, zucchini and ricotta cheese in a bowl. Mix well.
  2. Break eggs in another bowl. Add baking powder and milk and beat well with an electric beater. Add refined flour and mix well.
  3. Add egg-flour mixture to oats mixture and lightly fold till well mixed.
  4. Fill 8 individual silicon muffin moulds with the prepared mixture and place them on a baking tray. Put the tray in preheated oven and bake for 20-25 minutes.
  5. Remove from oven, demould and serve.
