Trim the bread crusts and cut each slice into four equal squares. Brush both sides with olive oil, arrange on a baking tray and bake for three to five minutes, or until the squares are pale gold. Remove from the oven. Thread stacks onto sixteen wooden skewers, starting each with a square of bread, followed by a slice of mozzarella, a slice of tomato and a basil leaf. Sprinkle with salt and crushed peppercorns, and repeat the sequence ending with a slice of bread. Place the skewers on a baking tray and drizzle with remaining oil. Bake for ten to fifteen minutes or till the cheese begins to melt. Serve hot, garnished with fresh basil leaves.
